POTATO CHEESE SOUP

With St. Patrick's Day right around the corner, what could be more in keeping with this Irish celebration than Potato Soup! Made creamy smooth with Michigan's own Pinconning Cheese, this super simple dish is sure to please on a Michigan still-a-bit-cool night.

5 Medium Potatoes
5 Tablespoons Chopped Onion
3 3/4 Cups Salted Water
2 1/2 Cups Milk
10 oz. Pinconning Cheese (or mild Colby)
5 Tablespoons Fresh Parsley
5 Dashes White Pepper

Peel, quarter and thinly slice the potatoes.

Combine potatoes, onions and water in a saucepan, and cook until tender, about 15 to 20 minutes.

Pour half of the potatoes and all the water into a blender or food processor. Add milk and cheese and puree until smooth and creamy.

Pour blended mixture back into the saucepan with the remaining potatoes.

Add parsley and pepper. Simmer for 5 minutes (do not boil). Serve with Irish soda bread.

Serves 5.
