LOW-FAT MACARONI AND CHEESE

If you are like most people, you are just now realizing that you "ate too much" over the winter and summer is just around the corner with body-baring clothing to be faced! With that in mind, here is an old family favorite "lightened up" but still tasty and filling!

2 Cups Macaroni
12 oz. Non-fat Shredded Sharp Cheddar Cheese
1 Cup Non-fat Cottage Cheese
3/4 Cup Non-fat Sour Cream
1/2 Cup Skim milk
1.5 Teaspoon Non-fat Margarine
2 Teaspoons Grated Onion
1/2 Teaspoon Salt
1/4 Teaspoon White Pepper
2 Egg Whites
1/4 Cup Breadcrumbs
1/2 Teaspoon Paprika

Cook the macaroni yielding about 4 cups. Melt the margarine or use liquid margarine instead.

Combine the first 10 ingredients; macaroni through to egg whites; stir well, and spoon into a 2 quart casserole coated with non-fat cooking spray. Combine the breadcrumbs and paprika and sprinkle over the casserole.

Cover and bake at 350 degrees for 30 minutes. Uncover; bake 5 minutes more or until set.
